I love roasted vegetables and I used to do it in the oven. But the air fryer makes it with lesser time and also it makes vegetables crispier.
Roasted vegetables are a great side dish and even can serve as a healthy snack. It makes the veggies crispier outside with a moist tender inside. You can also serve it in many different ways.
Easy Roasted Vegetables in Air Fryer
This is a fantastic way to cook the veggies. By using an air fryer, you can roast vegetables until they are tender and soft. Air fryers use hot air to cook your food, so you don't need much oil to cook the vegetables.
This means that you can enjoy roasted vegetables without all of the fat. You can easily make the roasted vegetables completely oil-free (WFPB) without losing much moisture in the air fryer.
An air fryer quicks food much quicker than the oven. Thus air frying your vegetables will save a lot of time and energy. These air-fried or roasted vegetables are healthy and delicious sides that everyone will love.

What vegetables you can add to the roast in the Air Fryer?
When it comes to air fryer roasted vegetables, there are endless possibilities of what you can add. However, some vegetables tend to roast better than others. Here is a list of some vegetables that roast well in an air fryer: potato, sweet potatoes, butternut squash, acorn squash, cauliflower, broccoli, green beans, brussels sprouts, carrots, beets, onions, peppers, mushrooms, etc.
Feel free to experiment with other vegetables as well; just be sure to cut them into uniform pieces so that they cook evenly.
You can roast the vegetables individually or a medley of them. But I will prefer to cook potatoes and sweet potatoes separately since these are hard vegetables and individually cooked crispier and better than in a mix of soft vegetables.
Here to roast the vegetables in the air fryer, I have taken cauliflower florets, broccoli, carrots, onions, zucchini, summer squash, and red peppers.
How to roast vegetables in the air fryer?

Ingredients -
Vegetables - add veggies of choice or follow the recipe card.
Olive oil - or oil spray/ avocado oil works well at high temperatures.
Salt & Pepper
Onion powder (optional)
Garlic powder - Garlic adds a nice strong flavor to the vegetables. Can skip if the seasoning mix already has garlic powder in it.
Italian seasoning - (or any of choice)
Instructions -
Wash and clean the veggies. Cut the veggies into bite-sized pieces. Place them in a mixing bowl. Add oil followed by seasonings. Toss nicely so that the veggies are well coated with seasonings. Let it sit for 10 - 15 minutes.
Preheat the air fryer at 380F for 3 minutes.
Transfer the veggies to the air fryer basket. Start the air fryer at 380F for 12 minutes or till the veggies are roasted evenly.
To retain the moisture you can also add 2 tbsp water to the base layer of the basket (between the two layers). This will give a steaming effect to the veggies. However, this step is optional though.
Don't forget to shake once or twice every 4 - 5 minutes. This is for even roasting vegetables. For best results, spray a little oil once when tossing in the halfway mark.
If not reached the required doneness, cook for additional 2 minutes or till they are cooked perfectly.
Once done, remove carefully and serve hot.
Note - All air fryer cooks differently. So timing may vary by 2 -3 minutes +- plus-minus from the recipe.
Can I air fry frozen vegetables?
Yes, you can cook frozen vegetables as well in the air fryer. They result in equally delicious and crispy vegetables. No need to thaw the frozen vegetables.
How to air fry the frozen vegetable?
To air fry the frozen vegetables, No need to thaw them before. Place them directly in the air fryer basket. Preheat the air fryer to 380 F for 3 minutes. Then spray oil on the basket and add the frozen veggies. Start the air fryer and cook for 5 minutes. By this time they must have thawed. If you want to add seasoning, add now with a spray of oil. Toss to mix them all. Now place it back and cook for another 7 - 8 minutes. Check and toss every 4 minutes for even cooking. Add 1 - 2 minutes more if not achieved the desired doneness.
What can I serve with air fryer roasted vegetables?
Roasted vegetables are itself a healthy meal if you are looking for some change in diet. It makes a healthier side dish as well. Serve it along with air fryer chicken thighs, air fryer leg quarters, or air fryer chicken tenders. Serve with shrimp tacos as a side dish.
