    What is yellow squash?

    Squash is a type of vegetable that is low in calories and high in nutrients. It is a good source of vitamins A and C, as well as fiber.

    Yellow squash is a type of summer squash that is known for its bright yellow color. It has a slightly sweet and nutty flavor and can be eaten cooked or raw.

    Yellow squash is especially beneficial, as it is high in beta-carotene, which the body converts into vitamin A. This vitamin is important for maintaining eye health and preventing age-related vision loss.

    The air fryer creates a crispy crust on the outside of the squash while leaving the inside tender and juicy. The air fryer also uses less oil than traditional frying methods, making it a healthier option.

    How to cut the squash?

    Remove the top and tail parts. No need to peel off the skin except if the part is not damaged. To air fry the yellow squash or summer squash, I slice them into a little thicker slices (0.5 - 1 cm or 1/4 - 1/2 inches). You can also make slices a slightly thinner, but they will be quicker than the recipe mentioned here. Check for the temperature 3 - 5 minutes less than this recipe.

    Ingredients you will need -

    Yellow squash or summer squash - you can also add zucchini to this.

    Onion powder

    Garlic powder

    Salt & Pepper

    Cayenne pepper or paprika (optional)

    Avocado oil - to spray - substitute with olive oil

    Note - You can add your favorite seasonings. Or keep it simple with plain salt and pepper. Garlic powder adds a strong flavor to the roasted squash. So I prefer to add this to my roasted vegetable.

    How to air fry the yellow squash?

    1. Preheat your air fryer to 390 degrees Fahrenheit.

    2. Cut the squash into thin slices, about 1/4-inch thick.

    3. Toss the squash slices with olive oil or cooking spray.

    4. Spread the squash in a single layer in the air fryer basket.

    5. Air fry for 12 - 14 minutes, or until crispy.

    How to serve air fryer yellow squash?

    Add to quinoa salad or to burrito bowl.

    Serve with vegan pasta.

    Serve as healthy snacking.

    Add to the pasta salad.

    • 1 Oil Spray

    Ingredients
      

    • 2 yellow squash
    • 1 tsp garlic powder
    • 1/2 tsp onion powder
    • salt to taste
    • 1/2 tsp black pepper (to taste)
    • 1/2 tsp cayenne pepper or paprika optional
    • oil spray or 1 tsp oil to brush/ spray

    Instructions
     

    • Preheat the air fryer to 390 degrees Fahrenheit.
    • Cut the squash into slices about 1/4- 1/2 inch thick.
    • Toss the squash slices with olive oil or cooking spray followed by the seasonings.
    • Spread the squash in a single layer in the air fryer basket.
    • Air fry for 12 minutes, or until crispy.
    • Remove once done and serve hot.
