And you can make them crispier or less depending on how you want them. e.g. for snacks or appetizers, I cook them for 1 - 2 minutes extra making them a little browner/ crispier than when I make them as sides.

Potatoes - Take any potatoes. All types of potatoes including baby potatoes work well for this recipe. However I make these breakfast potatoes without skin and for that reason, I choose the bigger ones. You can keep skin on.
Olive oil or Avocado oil - A little bit to coat the potatoes with the spices. You can substitute oil with broth also but oil adds a nice flavor and helps to brown the potatoes better.
Seasonings - garlic powder, onion powder, smoked paprika, oregano, salt, and pepper. Add any of the seasonings of your choice.
How to make air fryer home fries?
The first step is to preheat your air fryer at 400 F for 3 minutes.
In the meanwhile, peel off the skin and dice them into medium bite-size pieces. Transfer the potatoes to a sieve and run through cold water to get rid of extra starch.
Wipe the potatoes dry with a kitchen towel before adding oil and spices to them.
Then, add the potatoes to a large bowl and drizzle with olive oil. Add the seasonings and toss nicely to coat the potatoes evenly.
Then, transfer the potatoes to the air fryer basket and cook for 15 minutes, or until they're crispy and golden brown.
Shake the potatoes at 5 minutes intervals for even heat distribution.
Once the potatoes are done, you can serve them with your favorite dipping sauce.
Extra Tips -
After cutting the potatoes, wash them once or twice to remove the excess starch. Then keep the potatoes in ice water for 15 minutes. This will make the potatoes crispier than just cooking them without this cold water treatment.
Wipe the potatoes dry before adding the oil and seasonings to them.
Don't overcrowd the basket. Make in batches rather. However, a little overlapping, in the beginning, is okay since they shrink a little while cooking.

You can add as many variations to your home fries when it comes to seasonings. I love garlic powder, onion powder, and dried oregano for my potatoes. However, you are free to add seasonings of your choice.
Well, the answer is - it depends on YOU. However, soaking in cold water for 15 minutes makes a great difference to add crispiness to the fries. However, in the air fryer, you can also get similar crispiness by increasing a few more cooking times. But it won't stay crisp for long hours.
Though I strongly advocate soaking in cold water because I love the crispiness I get in that way, it's not essential too. If you don't want them to be crispy, you can anyways skip and save that 15 minutes time.
Regular bite-sized potatoes (as in the picture) take 15 minutes at 400 F. To make them extra crisp and brown add 2 - 3 minutes depending on what doneness you need in the potatoes. Timing may vary slightly with the size of fries and the type of air fryer. Don't forget to shake them every 5 minutes at regular intervals.
