I love to make them with baby potatoes. Baby potatoes have thinner skin and higher moisture. For bigger potatoes, cut them into bite-sized pieces. In baby potatoes, you can make them with baby red potatoes, baby russet potatoes, fingerling potatoes, yukun gold potatoes.
Fingerling potatoes also work well for this recipe. Fingerling potatoes are a little longer making an oval or finger-like shape. These are too small potatoes like baby potatoes but larger than that. To make air fryer fingerling potatoes, you may try the time +2 or +3 minutes. Also since these potato skins are thin, keep them on for a crisp bite.
