Wash and clean the potatoes.
Dice them into bite-sized pieces.
Wash once and then transfer to a large bowl filled with ice or cold water.
Soak it for 10 minutes and then drain out.
Wipe them dry with a clean kitchen towel.
Then transfer to a dry bowl and add the seasonings.
Drizzle olive oil and toss to mix them all.
Preheat the air fryer at 400 F for 3 minutes.
Then transfer the seasoned diced potatoes to the air fryer basket.
Cook for 12 - 15 minutes depending on the desired doneness.
Remove once cooked golden brown and crisp.
Drizzle a dash of lemon juice and add finely chopped herbs to the potatoes.
Toss once to mix them well. And serve hot.
